Nutrition Information

Consulting Dietitian, Carol Mier, RD, LDN.

My mission on campus is to provide accurate, science-based information on nutrition. Most of my work involves individual counseling with students having dietary concerns such as, weight management, food allergies, specific diets, or issues with food. I am also available to speak to groups on campus or to answer nutrition related questions. Call me at 456-8477 with questions or to set up an appointment on Tuesday or Wednesday in my Faculty Center Office.


We are aware of the importance of providing appealing products that are healthy and nutritious. Good nutrition is a concern of our students and a priority of the Dining Center Management.

To better serve the nutritional needs of the Residents, DDC has on staff a licensed, registered dietitian.

Concerns related to diets, nutrition, allergies, or other food/health issues can be promptly addressed in a professional and confidential manner, free of charge.

DDC also provides and maintains a nutrition information area, conveniently located in the main Dining Room, to keep the college community up to date on the latest information.

Meatless Alternatives

To serve the diverse needs of our customers DDC provides multiple meatless alternatives at each meal period.

Anyone with a meatless alternative idea is encouraged to contact the DDC office. Many of the menu ideas are a result of our customers input.
